Poultry Processing

 

Cobb Creek operates a USDA inspected poultry processing facility—one of only three in Texas. We not only process our own pastured poultry but operate as a resource for other poultry farmers in the region.

Our Methods

Our USDA inspected processing facility is located on Cobb Creek Farm, and all birds are harvested in a humane manner to USDA standards. Cobb Creek farmers control and oversee every aspect of the harvesting process. Our own birds are caught in the dark to reduce stress, then processed immediately. We process less than 150 birds/hour, versus 8500 birds/hour at industrial processing plants, and each broiler is harvested by hand, rather than hung up alive to be killed by dehumanized machines. Our small-scale, one-on-one slaughter methods ensure that each chicken experiences a minimum of stress and pain.

 

 

Directions

Dallas & Fort Worth (Via 1-35 E & 1-35 w)

We are located near Hillsboro Texas. Head south on 1-35 and take exit 368A toward Texas 22/Texas 171/Whitney/Corsicana

Continue through Intersection onto I-35 Frontage Rd for 1 mi. Turn left onto FM3267 and continue for 2.4 mi. Stay left at the split onto Country Rd 3106 for 2 mi. Turn left at 3107 and go .2 mi. Our entrance is on the left. Look for our sign and follow the gravel driveway until you reach our tan building with green trim.

 

Austin via I-35

Head north on I-35. Take exit 362 to merge onto I-35 Frontage Rd and go 2.6 mi, you will travel around the rest stop. Turn right onto Chatt Rd/E County Rd 3111 and go 2.8 mi. Turn right onto County Rd 3106 and go .5 mi. Turn left onto County Rd 3107. Our entrance is on the left. Look for our sign and follow the gravel driveway until you reach our tan building with green trim.

 
 
 

 

Pre-Slaughter Consumers Guide

We are dedicated to providing our poultry processing customers with a great finished product. In order to do our very best, we need your help. Below describes what we will expect from you on the day we slaughter your birds.

 
 

Feed Withdraw

Possibly the most important step in your pre-slaughter procedure. All poultry scheduled to be slaughtered MUST have their feed withdrawn at least 14 hours in advance, but NOT more than 24 hours. DO NOT withdraw drinking water.

Crates

All poultry must be presented for slaughter in suitable plastic crates. If you don't have crates you can fill our crates with your birds upon arrival to the slaughterhouse.

Drop-Off Procedure

Unless you have made other arrangements with the Plant Manager, you are expected to drop off your birds at 7:00 AM. Upon arrival and before unloading, you are expected to check in with the Plant Manager to fill out processing paperwork.

Order of Processing

First come, first served.

 

Packaging and Labels

We vacuum pack all products. We also provide on-demand labeling with the ability to include product pricing on the label. You do not need to bring labels.

Pick-Up Procedure

Unless you have made other arrangements with the Plant Manager, you are expected to pick-up your birds on the same day that you drop them off. Pick-up time is between 3 and 5 PM. Please bring plenty of very clean ice chests or other suitable containers for product pick-up. Please leave your ice chests with us at the time of poultry drop off. We will sanitize them and place your birds directly in them after packaging.

We do sell ice if you would like to ice down your product for the return trip. We also sell boxes for transporting product, but I would only recommend this to those who are able to place the box in a separate insulated container.
